فراصوت تشخیصی، روشی غیرمخرب در کیفیت سنجی محصولات کشاورزی-غذایی

چکیده

روش­های متعددی برای ارزیابی کیفیت و تعیین تقلب در مواد غذایی و محصولات کشاورزی وجود دارد. این روش­ها می­تواند به صورت مخرب و یا غیرمخرب باشد. مزیت سامانه های غیرمخرب، استفاده از  نمونه پس از آزمون بوده  همچنین می­توان تمام مواد را مورد آزمون قرار داد، درحالی­که در روش مخرب به علت تخریب ماده، بایستی آزمایش­ها بر روی نمونه­ها صورت گیرد. یکی از آزمون­های غیرمخرب روش فراصوتی است که می­تواند در تعیین کیفیت محصولات کشاورزی و دامی و فرآورده­های آن­ها مورد استفاده قرار گیرد. همچنین می­توان با فناوری فراصوت از ایمنی مواد غذایی همچون وجود مواد خارجی مثل سنگ، شیشه و.. اطلاع حاصل کرد. فراصوت یک روش تشخیصی غیر مخرب، سریع، کم هزینه، قابل حمل و دوستدار محیط زیست می­باشد که به آسانی قابل استفاده توسط هرشخص بوده و استفاده از آن، نیاز به مهارت خاص و پیچیده ندارد. در این بررسی کاربردهای فراصوت تشخیصی به سه دسته تقسیم بندی شده و هرکدام به طور مجزا بحث شده است. این طبقه بندی شامل تشخیص تقلب و تعیین کیفیت محصولات کشاورزی، محصولات دامی و طیور و روغن ها، آب میوه ها و مایعات می باشند. در  انتها چالش­ها و مشکلات استفاده از روش فراصوتی بحث و جمع­بندی شده و روش­های کاهش این مشکلات و بهینه کردن و افزایش راندمان آورده شده است.

چکیده [English]

There are many approaches for food quality and safety evaluation and adulteration detection of agro-food products. These ways include destructive and non-destructive. After non-destructive tests, foods can be used and also we can apply all experiment case studies for testing but in destructive test we can test just afew samples. Ultrasound is one of non-destructive tests which can use in quality evaluation and fraud detection of agricultural, livestock and poultry products. Also from detection of foreign body in packaged and canned foods to microbial contaminant detection by ultrasound technique is available. Diagnostic ultrasound in food science is fast, low cost, portable and easy to lean. In this work, evaluation and application of diagnostic ultrasound has been classified in three parts which include: a. agricultural products b. livestock and poultry products and c. vegetable oils, juices and other drinking. At the end on paper challenge and some difficulties in ultrasound are given and some problems for solve and reduction of these challenges are given.
